Ode to The Verdict of a Coconut Cream Pie
Mrs. McClarity, with her coconut cream pie fluffed high,
Takes the witness stand as an accessory to heart disease.
The counsellor exhibits a label to confirm evidence;
“In the right order, main parts are milk, sugar, flour, water…” “Yes.”
“Coconut flakes, vegetable shortening, egg yolks, cream…” “Yes.”
“Next, soybean and hydrogenated palm kernel oil…” “Yes.”
“Flavorings, corn syrup, maltodextrin, modified butter…” “Yes.”
“Few gums like xanthan, locust bean, guar gum… “Yes, for texture.”
“Least: polysorbates, lecithin, propylene glycol…” Yes, it’s standard.”
“Does one piece have 43 glucose grams and 55 mg of cholesterol… “Yes, I think.”
“Do you know how long you must exercise to burn off 400 calories?” “No.”
“An hour of playing soccer or tennis or running 30 minutes at 8.6 miles.”
A stern look. “Too much fat and sugar turns into fatty liver disease that raises blood pressure.
Mrs. McClarity, your coconut cream pie is guilty of chronic inflammation and heart disease.”
